Cooking, dancing, and baking with my littles. Our kitchen is the heart of our home. Let me tell you I can’t even count the wonderful memories that have been made there. This post today is going to be on Cruz’s Mini Cherry Pop-ups! They are so cute! Plus, they taste delish. Yuuuuumy!! They are perfect for little hands! Big hands love them too… 😉 Daddy loves these because his favorite pie is cherry pie (and key lime, but Cruz doesn’t know that yet!) 🙂 These little cuties are mini cherry pies! Oh, and Miss Cruz is the expert! Daddy loves to come and steal the cherries out of the bowl and Cruz occasionally tries to wipe flour on daddy too! 🙂
Mini Cherry Pop-ups
Grandma K’s Pie crust
1 cup Crisco
3 cups flour
1 TBSP white vinegar
3/4 cup milk
For the crust combine flour + shortening until creamed. In a small bowl combine egg, vinegar, and milk; mix with a fork. Add to flour and shortening mixture. Combine together with hands until a nice dough is formed. Dust some flour on that pretty counter of yours. Cruz enjoys getting flour everywhere! Honestly, I don’t mind. I love watching her in the kitchen! Take 1/2 the dough and place on floured counter. Rub that rolling pin with some flour too! Cruz has her own rolling pin! (You can shop in the post below) 😉 Sprinkle top of dough lightly with flour. Roll the flour out with your rolling pin until a nice dough sheet is formed. Sprinkle the dough sheet with a tiny bit more flour. Use a mason jar (I hoard mason jars) and press the glass onto the dough sheet to make cute little pie crust!
You have to press and twist, mommy!
Grease a couple of baking sheets with butter. Reserve half of the mini pie crust and set aside. Place the rest of the mini pie crust on the baking sheet.
Cherry Pop up Filling
1 bag of frozen red tart cherries
2 cups of sugar
1/2 teaspoon of salt
3 TBSP of tapioca
1 tsp of almond extract
Mix together ingredients. Cruz likes to sing a sweet tune while she stirs! scoop out a few cherries and place them on the mini pie crust. Cruz says,
this part is the sticky part!
Top the pop-ups with the remaining pie crusts. Have your little use a fork to press down the edges to keep the filling of the pop-ups in place! Egg wash the tops of the pop-ups (1egg beaten with a splash of milk). Cruz and I use the remaining dough to cut out little hearts! Tiny cookie cutters work great too. Place hearts on top of the pop-ups. Lightly egg wash one more time and sprinkle with sugar!
This recipe has been used in my kitchen over and over and is such a great memory I have had creating with my darling Cruz. Baking with littles is the heart of my home brings so much joy. I know your littles would love this recipe too. Plus, they are great for little hands!
